Recipe for 2 loaves
2 1/2 cups rice flour
1/2 cup cornstarch
1/2 cup tapioca starch
4 tsp. baking powder
1/2 tsp. baking soda
1 1/4 tsp. xanthan gum
1 tsp. salt
2/3 cup margarine
1 1/3 cup sugar
4 eggs
2 cups mashed-ripe bananas
Instructions:
Combine dry ingredients. Beat margarine in bowl and gradually add sugar. Add eggs and beat well.
Add flour mixture alternately with bananas beating until smooth. Turn into two well-greased bread pans and bake at 350 F 1 hr. 10 minutes or until done. Cool and then remove from pans onto rack. Can be
frozen at this point. Delicious!
